Asian Chicken Lettuce Wraps

A quick (less than 30 minutes), easy, and healthy dinner that tastes delicious!

Ingredients:

  • 1 tbsp oil
  • 1 lb ground chicken
  • 1 yellow onion, diced
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp hoisin sauce
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • 1 cup matchstick carrot
  • 2 green onions, sliced
  • 1 head bibb lettuce
  • 1/2 tsp sesame seeds

Directions:

In a large pan, heat the oil over medium-high heat. Add the chicken and cook, breaking it up with the side of a spoon until it is no longer pink, about 5 to 6 minutes. Add the onion and cook, stirring occasionally, until it begins to soften, about 2 to 3 minutes. Add the garlic and ginger and cook until they become fragrant, about 1 minute. Stir in the hoisin sauce, tamari, rice vinegar, sesame oil, and red pepper flakes. Add the carrots and green onions and continue to cook until the carrots are heated through, about 1 to 2 minutes.

Spoon some of the mixture into each lettuce leaf and top with the sesame seeds. Serve immediately. Store the filling in the refrigerator for up to 3 days.
